Ten years ago, certified master cake decorator of Sweetness Desserts, Laura Summersett started baking wedding cakes out of her church’s kitchen. Now, her confections are known all over Central Texas, and she helped create recipes for the Silos Baking Co.
The talented cake creator realized she had a knack for baking at an early age. But even though she had natural cake-making abilities, she still soaked up every class and training program on cake decorating, even studying under a master cake decorator who worked with the original Wilton family.
“I studied buttercream in Waco, and I went to Austin to learn fondant, gum paste and other techniques,” she said. “I’ve had lots of training and opportunities to apply it in the cakes that I have created for my customers.”
But even though Summersett loves creating detailed creations for any occasion, wedding cakes are her first love.
“I truly count it as an honor to be a part of people’s special celebrations, and the greatest celebration you have is your wedding day.”
Summersett believes that the wedding cakes she creates should be as close to perfect as possible.
“I work my buttercream until it is as close to perfectly smooth as I can get it. Some days that happens easily, other days it’s a struggle, but a very smooth buttercream is one of my strengths.”
But that’s not all the cake designer can do. She can also create grooms’ cakes in almost any shape you can imagine, plus Elegant Dessert cakes, cupcakes, sugar cookies, brownies and cake pops. And with flavors like Ebony & Ivory, So Berry Good, and Crème De Menthe, there’s something for every taste.
“Here Comes the Bride is our most popular flavor, but our specialty is the Coffee Toffee Caramel Crunch,” she said. “When you walk by and
smell the chocolate and the coffee, you just want to dig into it.”
Whether Summersett is creating a six-tiered wedding cake with cascading flowers or dozens of holiday-themed cookies, she puts her heart into every ingredient.
“I love to join in on my customers’ celebrations and design their perfect cake,” she said.
