Many times, when couples meet with Lone Star Catering Company owners Josh Hale and Scott Studer, they aren’t sure what they want to feed their wedding guests. But with a menu list that boasts dozens of items, the seasoned food industry experts know how to hone in on the bride and groom’s favorite eats and create a menu that showcases their personalities.
The owners get to know each client and prepare a variety of menu options for the couple to taste before they commit to a dish.
“I send our menu list to the couple and then they come in and try different options,” Hale said. “We sit down and go over what they liked and some questionnaires that we have. It’s probably a two-hour meeting.”
The lengthy tasting is necessary, Hale said, in providing what the bride and groom really want for their big day.
“We had a meeting the other day where the couple was able to create their entire menu, and have everything written down just by tasting in that meeting,” he said.
The caterers, who pride themselves on creating southern comfort food, not only meet with clients and personally go over every detail, but they also act as the cooks, servers and clean-up crew for every event they cater.
“We don’t book more than two events a weekend so that Scott or I can be at every one,” Hale said. “You always have one of the owners there
to make sure everything that you asked for in that initial meeting gets done.”
The catering company’s most popular dishes include a raspberry, chipotle pork tenderloin, roasted green beans and garlic and cheese mashed potatoes. These and other highly-rated dishes can be served as a plated dinner, in a buffet or stations, or simply dropped off at the wedding venue.
“We care about our product and our service, and we’ve had nothing but good reviews,” Hale said.
Because the owners are so hands-on from the first meeting until the last dish is cleared, they prefer to speak with clients face-to-face.
“We want to give couple’s a completely customized menu, and use all of our food industry experience to make their day great,” he said.
